What’s a cheese lover to do? Look for lowfat varieties. Try mozzarella made from part-skim milk, with fewer calories and about two-thirds the fat of whole-milk mozzarella. Check the labels. Most large cheesemakers are now making low-fat varieties. And when buying other products, such as pizza, check for lowfat cheese as an ingredient.
